These gluten free waffles are one of the easiest waffle recipes you can make and they taste so good. I’m not strictly gluten free, but if I can make a recipe gluten free then I always do. I try to keep my kids gluten free too. For baking I find that substituting GF flour straight up can be difficult, in fact most of my recipes didn’t end up nearly as delicious as the stuff with gluten. I’ve tried many different brands of flours and found that the Bob’s Red Mill 1-1 is the best because with this flour you can simply substitute. And it won’t give you the dense baked goods with that “rice-flavored” taste.

These waffles are light and soft in the middle with a little crunch on the outside. We’ve been making these for breakfast about twice a week for the past few months, just a tiny bit obsessed I guess. But honestly, I don’t feel guilty serving these to my family every morning since they are literally sugar free, gluten free and uses coconut oil instead of any other oil. We love them with real maple syrup and plenty of fresh fruit (my son is currently in love with raspberries).

Yield 4 waffles


1 cup gluten free flour (we use Bob’s Red Mill 1-1)

1 tsp baking powder

3 eggs

1 ½ cups milk

¼ cup coconut oil, melted and cooled

1 tsp pure vanilla

Coconut oil spray

What you’ll need:

A Waffle Maker



Preheat your waffle maker.


In a medium bowl whisk 1 cup flour and 1 tsp baking powder together.

In another medium bowl whisk 3 eggs, 1 ½ cups milk, ¼ cup coconut oil and 1 tsp pure vanilla, until evenly combined.

Make a well in the dry ingredients and pour in the wet ingredients. Whisk the mixture together until combined and smooth with little to no lumps visible. Allow to stand 5 minutes to thicken (GF flours tend to make the batter more thick).



Spray the waffle maker with coconut oil spray and pour about a ladle of your batter into the preheated waffle maker. Serve right away with fresh berries and maple syrup.
